Berry Muffins

30 Minutes

Makes 6 large, or 14 mini

V

Dry: 

  • 2/3 cups coconut sugar 
  • 1 1/4 cups flour or you choice 
  • 1 tsp baking powder 
  • 1/4 tsp salt
  • 1 tsp vanilla- i like vanilla powder

Wet: 

  • 2 tbsp flax meal + 3 tbsp water (let sit for 5 minutes)
  • 1/2 cup grape seed oil 
  • 2/3 cup cup almond milk 
  • 1/2 dairy free cream cheese- i used kite hill’s almond cream cheese
  • 1/2 cup blueberries
  • 1/4 cup strawberries, diced 

 

Pre heat the oven to 375°F. Mix Dry ingredients in large bowl with a whisk. Add wet ingredients and mix together with a wooden spoon or a spatula and then fold in the berries. Grease the pan and scoop in the batter. Bake 15 minutes for mini muffins 25-30 for larger muffins or check with a stick and if it comes out clean they are ready. Let cool for 10 minutes before removing from pan. Enjoy:)
